Chewy buckwheat noodles, seasoned with chili paste and topped with marinated skate wing, this dish is fresh, light and hits all the savory hot spots. Korean pear and cucumber offer a bit of cool relief from the spice, and a cup of warm bone broth soothes the mild heat.
